Gluten free Christmas cookies

I asked my boyfriend to help me out and this is what he came up with … :D

Hi, my loves! I hope you had an amazing Christmas week, I had so much fun spending some time with my family <3 And baking cookies is another thing I like doing around Christmas. Luckily I took some pictures along the way and because I really liked the end result, you can find the recipe below. If you don’t know it yet, gluten free cookies almost always taste different than the regular ones – especially if you try to make them healthy in general. Although I love how they turned out, my grandparents made it clear that they prefer the traditional version ;) As you’ll see, the recipe is really simple, so there’s no reason not to try doing them! I also added some golden flax seed flour Special that was sent to me by Lepa z naravo, an online store retailing organic and cruelty-free cosmetics, but also LCHF flours and other dietary products. This is how I made them:

500 g gluten free flour    250 g golden flax seed flour    1/2 tsp salt    2 tbsp gingerbread mixture
ground nutmeg & cinnamon    275 g butter    200 g brown sugar    2 tbsp agave sirup/honey  ♥  1 egg

Add both flours, gingerbread, spices and salt into a bowl and mix. In a separate bowl, mix together butter and sugar on low speed and after 3 minutes, add one egg. When everything comes together, add the agave sirup or honey. Then start adding the flour & spice mixture spoon by spoon. At the end, the dough still looks sticky, but don’t be discouraged! You’ll form three balls, wrap them in plastic foil and put into the freezer (or on the balcony, winter is great for baking!) for 15 minutes. Then preheat oven to 200°C.

When the dough has rested for some time, take one ball, put it on a floured surface and gently press down. Then add some more flour on top, spread it with your fingers and then start rolling until the dough has around 0.5 cm. Then you’re ready to start cutting cookies! I mostly made stars, to be in the spirit of Christmas, but also some animals. However, the moose was too large and it broke down before I managed to decorate it …

Put into the oven for 10 minutes or until they are golden brown. Then put them on a rack and when they cool down, you can decorate them as you wish. I used the Dr.Oetker sugar pen, but I was so disappointed! It was hard to get the paste out, it didn’t attach to the cookies and above all, I just don’t like the taste. If I’m honest, I’ve never had any good experiences with these sorts of tubes. I’ll have to visit a professional baking store, maybe they’ll be able to help me out!

I hope you spent a very happy and comfortable couple of Christmas days with your loved ones this weekend! Although I worked for the most part of yesterday, I managed to have a cosy and calm Christmas eve with my boyfriend. Today, however, we had an amazing lunch with my family and then we spent a few hours at my grand parents’ house, which was also amazing. And here are a few photos of my cute Maltese dressed up as a reindeer! He wasn’t very pleased with our idea, but he managed to get through with a couple of dog treats, haha.  Anyways, I just wanted to say hi and wish you a very merry Christmas day! ♥

Upam, da ste ta vikend preživeli nekaj veselih in prijetnih božičnih dni s svojimi najdražjimi! Čeprav sem včeraj delala večino dneva, sva imela s fantom vseeno prijeten in miren večer. Danes pa smo imeli z družino super kosilo, nato pa smo nekaj ur preživeli še pri starih starših, kar je bilo tudi odlično. Tukaj je še nekaj slikic mojega maltežančka – jelenčka! Z našo idejo ni bil preveč zadovoljen, vendar je s pomočjo nekaj pasjih piškotkov preživel, haha. Želela sem samo malo pozdravit in zaželet zelo prijeten božični dan! ♥

Counting the days before Christmas ♥

Christmas lights are already shining on the streets and we can finally say yes to the Christmas spirit! I just love how easy it is to lighten up the room with just a few little decorations and tricks: DIY Christmas tree (made by my mom, I love how creative she is!), golden garlands, hot chocolate and Christmas songs. Is there anything else I need for a perfect Christmas? I guess not, but we are halfway there are I still need to search for a few decorations from last year. Until then I’ll just stick to the decoration I already installed in my boyfriend’s apartment last week. Here is my list of Christmas essentials that always brighten up my mood in December:

strolling around town with a cup of mulled wine in your hands ♥ adding a few drops of orange essential oil to the evaporator  lighting up some candles  adding golden garlands and fairy lights everywhere you can  listening to a playlist of Christmas songs on Youtube 

Another essential is a cup of yummy hot chocolate! The recipe is very simple, even if you don’t have a hot chocolate mix in your cupboard: mix three teaspoons of corn starch and three teaspoons of cacao with a cup of cold vanilla rice milk and slowly bring to boil while stirring constantly. Then cook it on low heat for another few minutes, add a teaspoon or two of honey and pour in your favorite mug! 

//Božične lučke že svetijo po ulicah, zato lahko božično vzdušje končno prinesemo tudi v stanovanje! Res mi je všč, da lahko sobo enostavno okrasimo z nekaj trikci in okraski: naredi-sam božična smrečica (ki jo je naredila mami, res je ustvarjalna!), zlate girlande, vroča čokolada in božične pesmi. Ali sploh potrebujem še kaj za popoln božič? Verjetno ne, smo pa že na pol poti in še vedno moram pobrskat za nekaj okraski od lanskega leta. Do takrat pa bo letošnja dekoracija, ki sem jo prejšnji teden namestila v fantovem stanovanju, dovolj. Tukaj je moj seznam ključnih stvari, ki vedno polepšajo moje vzdušje v decembru:

sprehod po mestu z lončkom kuhanega vina  nekaj kapljic pomarančnega eteričnega olja v izparilniku  prižgane svečke  obešanje zlatih girland z lučkami, kamorkoli se da  poslušanje božičnih pesmi na Youtubu ♥

Še ena ključna podrobnost je vroča čokolada! Recept je resnično enostaven, tudi če pri roki nimate mešanice za vročo čokolado: tri žličke koruznega škroba in tri žličke pravega kakava zmešajte z lončkom hlandega riževega mleka z vanilijo in počasi zavrite, medtem pa neprestano mešajte. Nato še nekaj minut kuhajte na majhnem ognju, dodajte žličko ali dve medu in prelijte v vašo najljubšo skodelico!

Let’s bring winter and Christmas spirit to our homes!

Hi, everyone! As my boyfriend does not care much about decorations and ornaments, I decided to bring a bit of Christmas spirit to his living room by myself. I just wanted something simple, but still festive, so that I really feel cosy when I’m there (and I’m sure he does too, but won’t admit it!). A few months ago, I got three jars at Mömax and since one of them was still empty, I decided to fill it up with tree baubles in 50 shades of violet & pink. A very girly step, I know, but that’s just how it is – I love violet and in my opinion it looks great! As for these gorgeous coffee cups with winter motives, they’re from Ikea and you can get them for € 2,5 apiece. This is probably the easiest way to add some Christmas and winter spirit to your home if you don’t have time or space to decorate a Christmas tree. I might add some more more ornaments the next week, but it already looks quite nice.
